In old days peat was cut by hand, then turned to dry, then footed into an upright position, so wind and sun can get to it (this picture), then put in pile when dry. Now the cutting is done by machine. The white flower past the peat is called bog cotton.
The peat is used for heating, also sold commercially as peat moss. Peat fires have a lovely smell to them.
